Ingredients
8 lamb rib chops (about 2 lbs)
5 garlic cloves, pressed
4 tbsp olive oil (divided)
2 tbsp fresh parsley (plus more for garnish) or 2 tsp dried parsley
2 tsp Tabasco sauce (optional for tenderizing and flavor)
1 tsp sea salt
1 tsp freshly ground black pepper
1/4 tsp dried thyme
1/2 cup chicken or beef stock (for sauce)
2 tbsp unsalted butter (for sauce)
Instructions
Pat dry the lamb chops and separate them into 3/4 to 1-inch thick pieces.
Mix garlic, 3 tbsp olive oil, parsley, Tabasco, salt, pepper, and thyme to create a marinade.
Rub the marinade all over the lamb chops, cover, and refrigerate for at least 1 hour or overnight.
Remove chops from fridge 30 minutes before cooking.
