Sold by the pound. You will be billed for the actual weight of the cut you receive. Steak slices are about 0.7 pound each and 3/4 inch thick with a bone-in center.  Perfect for high-heat searing or grilling to medium-rare with a juicy pink center and flavorful bone-enhanced richness.  Season simply with kosher salt, garlic, rosemary, and black pepper, then pan-sear or grill for a fast, elegant meal that rivals the coveted ribeye.

Made from Katahdin sheep raised on native pastures on our fourth-generation, Pennsylvania farm. We thoughtfully supplement with non-GMO milo, barley, field peas and sunflowers for robust animal health and a mild, tender, marbled flavor with zero toughness and gaminess.
