Sold by the pound.  You will be billed for the actual weight of the cut you receive.  Each package features a generous bone-in shoulder roast (approx. 3–5 lbs total), loaded with collagen that breaks down into fork-tender perfection and natural gelatin for luxurious sauces.

Made from Katahdin sheep raised on native pastures on our fourth-generation, Pennsylvania farm.  We thoughtfully supplement with non-GMO milo, barley, field peas and sunflowers for robust animal health and a mild, tender, marbled flavor with zero toughness and gaminess.
