Sold by the pound. You will be billed for the actual weight of the cut you receive.  Each rack (approx. 1.5–2.5 lbs, 7–9 ribs) is meticulously frenched by our butchers, exposing the bones for stunning presentation and even cooking.  Roast whole with garlic, rosemary, and Dijon crust for a crispy herb exterior and juicy pink center – ready in under 30 minutes. The pinnacle of lamb elegance, perfect for holidays, special occasions or intimate dinners.

Made from Katahdin sheep raised on native pastures on our fourth-generation, Pennsylvania farm. We thoughtfully supplement with non-GMO milo, barley, field peas and sunflowers for robust animal health and a mild, tender, marbled flavor with zero toughness and gaminess.
